Sawyers Bay Distiller's Cut is our boldest expression of this unpeated single malt. Bottled at 58% ABV, it spent four and a half years maturing in Seppeltsfield tawny quarter-casks before a final finish in a Topaque puncheon, adding another layer of richness and complexity. Unfiltered to keep the maximum texture in the spirit, this limited release captures exceptional depth and character.
TASTING NOTES:
Rich aromas of treacle, dark raisins and stewed figs lead the nose. followed by orange marmalade, toasted almonds, baking spices and oak.
A full-bodied palate with layers of treacle, toffee, dark chocolate and dried fruits. The tawny casks bring notes of dates and roasted nuts, while the Topaque finish adds luscious honey, muscat-like sweetness and a gentle lift of citrus peel. Despite its 58% strength, the spirit remains balanced and remarkably approachable.
Lovely long and warming finish with lingering treacle, cacao, cinnamon, toasted oak and a touch of espresso bitterness that keeps the sweetness in check.
