The discovery of peat on the island was the lighting-bulb moment for Furneaux Distillery. Since that discovery we have been foraging peat by hand, smoking our barley in our own fabricated malt kiln. Quite different to UK or other Australian peat, ours is from saline aquatic herb-lands. The vegetation is succulents, melaleuca and swamp-grasses, giving this whisky a gentle, aromatic smoke profile highlighted with brine and sweetness.
