It’s been a little while since we’ve seen some fortified wine casks coming off the racks in the bond store. Finally we are getting a little taste of the cakey, raisin, sultana profile from an Australian Tawny cask, combined with the bright spice of American Oak matured for 3.5 years in our coastal dunnage warehouse.

This whisky on the nose is bountiful with cascara, spice and cream. The palate is bright and carries rich, spice notes of cinnamon and cardamom, cherries and orange oil. Oak lingers on the finish, a gentle and warm oily note which leaves just a touch of saltiness right at the end.
