“This one is a lovely light unpeated release, the first of its kind from us as an unpeated bourbon cask, and the lowest we’ve diluted to so far at 43%. It was from the first batch of unpeated new make distilled on island after we commissioned our stills in 2019, and was sitting in 5 x 20l American Oak ex Four Roses Bourbon casks from Tasmanian Cask Company.

It’s quite a light spirit in colour, the nose has notes of tobacco and leather, which belie the palate to come. On the palate it’s a candy store, lolly bananas and musk sticks dominate, this whisky is lovely to hold on the palate for a moment, letting your full range of tastes access the sweetness and bright spice. The finish is light, but full of character as the creamy, candy notes linger on. Very moreish and, dare we say, ‘sessionable’.”
