SAWYERS BAY DISTILLER’S CUT

TAWNY CASK - TOPAQUE FINISH

Our first ever Sawyers Bay Distiller’s Cut! And one of our favourite releases. This spirit was distilled back in 2020, filled into two of the best fortified casks we could get at the time - 50yo Seppeltsfield Tawny quarter casks. The whisky was promising, after many years in cask, it had developed a fruitiness and a spice, but it had also developed a dry note on the back palate. Not at all what we wanted from the whisky, we wanted something juicy and full bodied.

The solution was clear - more time in the same cask would have run the risk of giving the spirit too much of an oaky flavour, drying it out even further. So we decided to decant the spirit out of the casks they were in (two quarter casks) and finish them in a Topaque puncheon. This puncheon, from Campbells Wines in Rutherglen are of incredible quality - they have been sitting in a Solera system for more than 50 years, slowly rotating and ageing fine Topaque.

They gave the whisky exactly what it needed, after around 8 months ageing the liquid had become well rounded, textural, and had gained a wonderful flavour of golden syrup and toffee. It always reminds me of my Dad’s Golden Syrup Dumplings. Delicious. It was tasting so good out of the cask that we barely diluted it at all, bottling it unfiltered at 58% ABV.
