“This release is another great example of why we decided to make Smoky Wedding part of our core range. Even in stronger, smokier batches our Flinders Island coastal peat is still an earthy, back palate performer, whereas the addition of Scottish peated malt to the mash bill gives this spirit a really fun balance of those two kinds of smoke.
As per usual, this spirit was produced using the combination of 50:50 Flinders Island and Scottish peated malt in the mash bill. It’s the result of a blend of two 100L American Oak ex Bourbon casks, one ex Heaven Hill at 5 years old, and one ex Makers Mark at 4 years old.
All dilutions in our whiskies are done using rainwater collected off our roof. Our distillery sits on the west coast of Flinders Island, and catches that westerly sea spray in a big way. All of our drinking water has a lovely level of minerality, and a touch of salinity which is highlighted best in this expression.”
