Scotland (and in particular, Islay) is the home of this incredible tradition, and the place from which we were inspired to build this distillery in the antipodean island set in the sea off Tasmania. We wanted to experiment with the contrast of flavour from the smoked grain from our land, versus the smoked grain from Scotland. This whisky was distilled from half Flinders Island peated grain, and half Scottish peated grain.

Our Flinders peat is made up of vegetation consisting of succulent swampmarsh herbs, tussocks, bordered by coastal heath, tea tree and melaleucas. It spends much of it’s time underwater, and provides a very interesting flavour. On the palate it presents as a “peat pillow”, with the majority of the smoke flavour on the back palate, quite earthy, warm and aromatic.

Scottish peat on the other hand, is made up of mostly spagnum moss and grasses, and provides to the palate a much more immediate smoke profile, with a dark roasted, sweet, bbq flavour up front. These flavours together have produced a really unique and delicious whisky.

This release was beautifully floral and delicate; tobacco and brown sugar on the nose, palate of porridge, orange, and light honey. The Scottish influence is quite present in this whisky, and balances nicely with the Flinders peated influence, leaving a lovely lengthy finish.
