FLINDERS ISLAND SINGLE MALT PEATED - SECOND FILL, SHERRY FINISH

From the first batch of peated spirit distilled on Flinders Island, we re-filled a number of 20l casks that had given us some of our earlier whiskies. We divided these casks into two different experiments; one was to have its full maturation in second fill (this was the previous batch FPR1), the other, this release, was then finished in a 100l ex sherry cask. Both have made damn tasty whiskies.

This whisky sat in its second fill casks for just under 3 years, then we decanted them into a PX cask for a further 8 months, giving the whisky a little juicy note. Expect a big nose of bright orange oil and warm apricot sponge. The palate has bright spice up front, giving way to a soft maderia cake, vanilla cream profile. This whisky has a lovely length, with that intrisically Flinders Island peat profile opening up the finish.
