Single cask, single malt whisky. How delicious, and this is one of our flagship styles, distilled from some of the first peated spirit we distilled on the island. Flinders Island Peated American Oak Ex Bourbon, filled at our distillery at the Flinders Wharf in Whitemark, then loaded on the back of a truck and driven out to our newly build bond store at Sawyers Bay.

3.5 years in a 100l cask has given this spirit spice and complexity. On the nose it is fresh and bright; clove, lemon oil and grassy notes precede a softer caramel tart profile. The front palate is zesty, a light spice and bright acidity zip first across the palate, giving way to a complex and bittersweet flavour. The finish is lingering but light. A soft peat profile grows exponentially as the residual oils coat the palate, leaving the finish quite earthy, woody and smoky.
