“This one was hard to keep in the casks. We were so excited to see this whisky mature because it was the first spirit that we distilled from 2019 when I moved to the island to commission our stills. As we were tasting it leading up to it’s maturity we were so stoked to see it was already presenting such amazing balance and soft texture.

This whisky is all about the fudge. It’s one of those bourbon cask releases where you’ve just hit gold in the timber. Heaven’s Hill supplied these ex bourbon barrels, which can mean a number of different bourbon producers, but it is all about the richer, more caramel notes and is an absolute pleasure to drink, making it very moreish.

As our first spirit distilled on-island, I am immensely proud of this whisky.”
