TASTING NOTES

Stewed red apples with clove on the nose, palate is beautifully structured with creamy sweetness, hints of cherry and vanilla. ​ The texture of this whisky is wonderful, a lovely length on the finish leaving a bright fruit profile

Now that Furneaux has been making whisky for over 6 years, we are starting to see some great things happening in our bond store. ​ From our conception, we have been filling different types of casks; some 20L for shorter-term maturation, all the way up to 450L puncheons for much longer term. ​ Those 20L casks are mostly gone now. ​ However, when we emptied them from their first fill to make the early batches of Furneaux single malt, we kept some and filled them up again for a second maturation. ​

There are so many benefits to this approach - one being that in a small format second fill cask, you can let the spirit mature for longer without concern of the whisky becoming too oak forward. ​ Another great aspect of second fill is that the spice profile is gentler, so the spirit can really shine. ​ Our unpeated spirit runs are quite a tight, clean cut, making the new make (unaged) spirit very bright and sweet. ​ Honestly, it smells like strawberries and cream in the vat. ​

This second-fill release was matured for 3 years in 5 x 20L casks. ​ There is still plenty of flavour imparted from the oak, which is beautifully balanced with all that bright, beautiful sweetness and fruity ester profile.
