Made using 100% Tasmanian pilsner malt, smoked on Flinders Island using our own coastal peat from the salt lagoons on the east of the island. This 120L botrytis cask was filled in 2020, making this release our first 5 year old whisky! Preferring the spirit at a higher strength, it became our first ever Flinders Island Peated “Distiller’s Cut”, bottled at a whopping 58% ABV. This higher proof means we don’t need to do any additional non-chill filtering, and can bottle it with all of it’s fats and oils intact, making it wonderfully textural.
It’s all sticky date pudding and dark treacle on the nose, with a lovely toasted coconut and smoked cherry ripe palate. It comes in strong but finishes beautifully earthy and sweet.
